If you love a classic mimosa but want something more tropical, this Pineapple Mimosa is a must-try. It’s a brunch worthy cocktail that’s also ideal for any special celebration. It combines sweet sparkling wine with tangy pineapple juice for a well balanced drink.

On the rare occasion I enjoy a sparkling wine, my first choice is prosecco. Prosecco is an Italian sparkling wine. It’s also a more economical choice than French champagne or California sparkling wines.

Ingredients for a Pineapple Mimosa

Just two ingredients plus a pineapple wedge make this impressive drink.

  • Pineapple Juice
  • Sparkling Wine such as Prosecco or Champagne

Tips for making mimosas

When pouring the prosecco, slightly tilt the champagne flute and pour down the side of the glass to minimize the foam. Once the foam has subsided, add the pineapple juice to fill the glass.

Start with chilled ingredients. Refrigerate both the sparkling wine and pineapple juice for the best results.

Don’t use ice. If you want a colder drink, chill the glasses.

Use the right glassware for this pineapple mimosa. Champagne flutes will hold the bubbles longer than a coupe glass.

Get the right ratio. It should be 1:1, but you can adjust for more sparkling or juice for your taste.

What to serve with mimosas

Serve a variety of brunch foods such as egg bites, brunch boards, banana crumb cake, or my maple sausage croissant casserole.

When to serve pineapple mimosas

Champagne flutes make the best presentation for a mimosa. Mimosas are often thought of for celebrations or special occasions, but I like to serve them anytime I host brunch.

Holidays like Mother’s Day or Easter are ideal for this tropical mimosa variation. It’s perfect for graduation season or bridal showers and summer parties or poolside gatherings.

More drinks made with wine

Sometimes I don’t always use a full bottle of wine when I open it. I hate to waste things, so I like to make new cocktails with partially full bottles. A festive white wine spritzer is a treat during the holidays, while a cranberry orange mimosa will use up a bottle of sparkling and is perfect for the holidays.

If you need something for a party, crockpot mulled wine uses a full bottle of red wine.

What type of sparkling wine is best for a mimosa?

My choice is Prosecco, but a Brut Champagne would also be nice. Either choice will balance the sweetness of the pineapple juice.

Can I make a mimosa ahead?

No, I don’t recommend it. The sparkling wine will lose its bubbles and may go flat, ruining the drink.
