In a medium saucepan, combine the sugar, water, and sliced strawberries. Bring mixture to a boil and gently stir to dissolve the sugar. Once boiling, reduce heat to simmer and allow to cook for 8 - 10 minutes.
Using a slotted spoon, remove strawberries from the liquid. Discard the strawberries. Strain the liquid into a glass jar with a lid. Cover and refrigerate until ready to use.
